The traditional techniques used in this process results in a razor-sharp blade that can cut slices with extraordinary ease. Through this complex process, a hardness of 57-58 HRC is achieved, ensuring optimal sharpness and edge retention.  The beautiful wooden handle adapts ergonomically to every hand, so even long cutting sessions feel absolutely comfortable.
